My friend Corrine Miller is not only a generous and gorgeous woman, she's a talented chef. When asked to create a meal for 300 that could be packaged in a box, this is what she came up with.
First, a yummy chicken salad wrap with lots of goodies inside, wrapped in unbleached parchment paper and tied with green raffia.
The vegetables on the side were nestled inside a hand-made french fry box.
For dessert, key lime pie bars with an edible flower on top, courtesy of Gail Madsen Clayton, master gardener extraordinaire.
I told Corrine that had I been in charge, the meal would have been a disaster. I would have suggested Peanut Butter and Jelly, a sack of chips, an apple and a popsicle for dessert. I also would have just thrown everything in paper sacks. I guess there's a reason no one asks me to plan these things. But thank heaven for people like Corrine who know how to make things special.

I couldn't go that night...I was bummed about it, but I did get to try one of her yummy (understated!) chicken salad wraps. Janet and I were walking out of Annie's house after Visiting Teaching when Corrine came running out of her house asking us to sample them for her! WOW! They were sooo good! See, blessings from doing visiting teaching! :)
