This recipe comes from Recipes from the Old Mill. I altered it for those of us who can't tolerate too much wheat.
1/3 cup brown sugar
2/3 c. crunchy peanut butter
3/4 c. honey
2 T hot water
2 tsp vanilla
2 1/2 c. rolled oats
1 c whole wheat flour (or spelt flour or white flour)
1/4 c wheat germ (or 2 T. ground flax seed)
1/2 c sunflower seeds or nuts (I like chopped almonds or pecans or a mix)
1 T. sesame seeds
1 c. chocolate chips
1/2 c. raisins or other dried fruit, chopped up into little bits
1/2 c. coconut (optional)
1. Mix brown sugar, peanut butter, honey, water, and vanilla until well blended.
2. Stir in rolled oats, whole wheat flour, wheat germ, sunflower and sesame seeds, chips, raisins and coconut.
3. Press mixture into a greased 9x13 pan.
4. Bake at 350 for 15-20 minutes or until lightly browned. Cut into bars while still warm.
